Raimund Döllerer produces his unique selection of sausages, hams and bacons based on traditional recipes and is careful to ensure exceptional quality across his entire range of meats. The finest ingredients form the basis for his wide range of sausage products. These include the best meats from the region and his special mix of flavours including ginger, nutmeg, salt, white pepper, lemon and onions. But this alone is not enough to create an exceptional sausage.
Creating venison, goose, lamb, wild garlic and char sausages not forgetting Döllerer’s fresh veal sausages, the original Golling sausage and the fine Salzburg fried sausage, requires a good dose of creativity. Raimund is never short of ideas. When he starts his butchery work at 5 in the morning with everything around him still asleep, he is truly in his element.
He chops, stirs and shapes in complete silence. And when there are finally hundreds of fresh and fragrant sausages on the table, Raimund’s eyes still sparkle – despite doing the job for decades. And when you hear him singing and whistling you know that he has been making sausages!
